Gluten Free Review: Betty Crocker Gluten Free Brownie Mix

Finding treats for my little guy has been a huge issue since I put him on the gluten free diet. I’ve tried a few different brands of brownie and cookie mixes and I’ll post reviews of those here, but I’ll start with one of my favorites: Betty Crocker’s Gluten Free Brownie Mix.

How to Make Gluten Free Brownies with Betty Crocker’s GF Brownie Mix

All you need is ½ stick of melted butter, 2 eggs and a box of Betty Crocker’s GF brownie mix. Grab a glass bowl and either an 8x8, a 9x9 or an 11x7 pan and you’re ready. You don’t need to get out your hand mixer unless you want to.

Preheat the oven to 350, melt the butter and mix all the ingredients together before throwing it in a brownie pan and you’re done. It literally takes 2 minutes to get the brownies into the oven.

(Once, I forgot to melt the butter first and had to get out my hand mixer. It added another 5 minutes to the prep time, but the brownies still turned out well. Some people actually prefer to do it this way. The batter will be a little bit thicker, so make sure to spread it evenly across your brownie pan.)


The Importance of Temperature and Time: Betty Crocker’s Gluten Free Brownie Mix

Gluten free baked items are notoriously difficult to get just right and this one is no different. It’s important that you follow the times for baking carefully. I like to undercut the time just a little bit and check it with a toothpick (if it comes out clean, you’re done!). Overcook these brownies even a little bit and you’ll end up with hard, inedible edges.

Make sure to let them cool completely before cutting and serving or else they will sort of smush and you won’t get a whole brownie but brownie chunks.




Get Creative with Your Betty Crocker Gluten Free Brownie Mix

The fact that there are so few GF options for desserts makes me get really creative with the few things that actually taste good. I’ve used this mix as the bottom part of an ice cream cake, crumbled up a failed batch that sat too long in a warm oven and sprinkled it over ice cream and I’m considering a layered cake with this mix and Betty Crocker’s Gluten Free Chocolate Chip Cookie Mix. Anyone tried that? Below, I used some icing to write 'Ex Periamus!" to add a GF option to an otherwise glutentastic Harry Potter birthday party.

Thankfully, a number of large grocery store chains carry Betty Crocker’s line of gluten free dessert mixes. Even those that don’t carry all of them do at least stock the brownie mix and the chocolate chip cookie mix.
